I know I said in my last post I wouldn't be posting as much and it's true but I do want to show you some of my progress in class (I know it's only been 3 days but I'm a little excited) They were taken with my phone so the image isn't that great.
These are the almond pralines
Next are the Apricot Pralines they aren't quite done.
To finish them we had to dip them in tempered milk chocolate.
My group started tempering the chocolate for dipping the pralines right off the bat but it still didn't temper in time for us to get them all done. I made a mocha ganache yesterday that set up over night and we piped them out then cut into little pieces. Our group also had to do the caramel pralines so I made the caramel filling for that today. We still have a lot to get done tomorrow plus we're making hand rolled truffles. How everyone is having a good week!
Wonderful! I love making chocolates and would love to take a class too one day.
